Banana Bread

This recipe is gonna make you go bananaazzz girl ππ€·ββ (Dad joke, sorry #notsorry) @bonniebrazilb has whipped this incredibly gooey, high protein, delicious banana bread and itβs making the Free Soul kitchen smell INSANE π try this one out ladies!
Wet Ingredientsβ¬οΈ
π3 very ripe bananas (300g)
π150g soya yogurt
π30ml/3 tbsp aquafaba OR 1 flax egg
π90ml maple syrup π―
π1 tsp vanilla extract
π1 flax egg π50ml oat milk
π15g (2 tsp) coconut oil
Dry Ingredientsβ¬οΈ
π140g wholemeal flour
π30g oat flour
π50g free soul vegan vanilla protein
π1 tsp baking powder
π1 tsp cinnamon
π30g chopped walnuts
π60g raisins

Topping (optional)β¬οΈ
β¨15g vanilla protein
β¨10g coconut sugar
β¨15g oats

Preheat oven to 180c and line or grease a loaf tin. Combine all the wet ingredients in a bowl. In another bowl, combine the first 5 dry ingredients. Pour the wet ingredients into the dry ingredients mixture, then stir. Once combined, stir in the walnuts and raisins. Transfer the mixture to the loaf tin. In a small bowl, combine the topping ingredients and sprinkle over the cake mixture. Cook in the oven for 45 minutes, or until a skewer comes out clean. Allow to cool in loaf tin for 20 minutes, then transfer to a wire rack and cool for a further 20 minutes. Enjoy! π€©
