Protein Banana Breakfast Muffins

These delicious Protein Banana Breakfast Muffins are a perfect start of any day! 👩‍🍳

Ingredients

-1 3/4 cups Jumbo Roller Oats
-1/4 Cup Buckwheat Flour
-1/2 cup 🥥 oil (melted)
-1/2cup maple syrup 🍯
-2 🍌 (mashed)
-1/4cup almond 🥛
-1 Tsp baking soda
-2 Tbsp Chia Seeds
-1 Tsp vanilla extract
-1/2 Tsp salt
-1 Scoop Free Soul Vanilla

How to

Preheat the oven to 180 degrees and grease all 12 cups of your muffin tin with coconut oil.
In a large bowl, mix the coconut oil and maple syrup together with a whisk. Mix in the mashed bananas, almond milk and vanilla extract in a bowl and add to the maple mix, followed by the baking soda, salt, chia seeds.
Blitz the oats in a food processor then add to the buckwheat flour, baking soda, a pinch of salt, and Free Soul vegan or whey protein powder. Combine the dry and wet mixture together.
Divide the mixture evenly between the muffin cups and sprinkle some oats and chia seeds onto the top. Bake muffins for 22 to 25 minutes and insert a toothpick to check it’s baked well. Leave to cool and enjoy! 😍Happy Sunday!!
