Soul Food: Chewy Dark Chocolate & Ginger Biscuits

Christmas in just a couple of days! These are perfect for this time of the year. Crispy on the outside, chewy on the inside. They will make your house smell amazing and put everyone in full Christmas mode for Christmas morning.

Ingredients

75g Oats

30g Free Soul Ginger Biscuit Protein

1 tsp Baking Powder

1 tsp Nutmeg

2 tsp Cinnamon

45g Coconut Oil

40g Sugar-Free Syrup

5g Stevia

1 Egg

1/2 Orange Zest

Recipe 

Preheat the oven to 160°C, and line a baking tray.

Blend the oats in a Nutri-bullet until you have a flour-like consistency.

Place the oats into a mixing bowl, along with the protein, baking powder, nutmeg and cinnamon.

Add the melted coconut oil, syrup, stevia, egg and orange zest to the bowl. Mix until combined.

Cover the bowl and place in the fridge for 10-15 mins to firm up.

Once chilled, place headed teaspoons of mixture onto the baking tray to form 9 cookies.

Place in the oven for about 12-15 mins, or until golden brown.

Once cooled, dip one half of the cookie in melted dark chocolate and sprinkle with orange zest.
