Try this yummy and filling snack! Rich in antioxidants from the raw cacao and chocolate chips and rich in potassium from the bananas. Who says healthy can't also mean you can indulge in not-so-guilty pleasures?
2 mashed bananas
4 tbsp maple syrup
1/2 cup plant-based yoghurt
1/2 cup almond milk
2 scoops of Free Soul chocolate vegan protein powder
3 tbsp raw cacao powder
1 tsp baking powder
1/2 cup dairy free chocolate chips
Preheat the oven to 180 degrees and grease all 12 cups of your muffin tin with coconut oil so the muffins don’t stick to the side.
Place all the ingredients in a mixing bowl and mix until well combined, adding the chocolate chips last and stirring until they are distributed evenly.
(Pro tip: coat chocolate chips with flour or coconut flour if you're gluten-intolerant so the chocolate chips don't sink to the bottom.)
Spoon the mixture into the muffin tin.
(Pro tip: use an ice cream scoop to get the right proportions of the mixture.)
Sprinkle some extra chocolate chips on the top and bake muffins for 25 minutes.
Leave to cool and then enjoy!
